what i eat in a week | 2021 tax busy szn

Hiya!

Squeezing in time to churn out this blog post because let me tell y’all – this past work week brought the HEAT of tax busy season. Remember my daily routine I posted last week? That went out the window on Thursday/Friday/Saturday. One of my clients is a suuuper quick turnaround so I was working long hours. I want to keep it honest on here – that my routine is ideal and achievable 80% of the time – but I also don’t want to contribute to the “busy” Olympics. Anyway, I know this coming week will also be kind of crazy, but there’s nothing like working late with co-workers on a Saturday night!!

Continuing on with my busy szn series, I thought it’d be fun to share what I eat in a week while working long hours. I shared a “what I eat in a day” back in the summer, but obviously times have changed and life is no longer as blissful haha. As I mentioned in last week’s post, meal times are my time to step away 100% from work, but I also can’t linger because work calls. For the most part, I like to think that I’m fueling my body with healthy meals, but you can bet I’m treating myself to Flamin’ Hot Cheetos post-4/15 🤪

BREAKFAST:

I kid you not, I have my eggs and avo toast every single morning. Busy season weekends don’t allow for Waffle Sunday brunch sadly, so this is what I’m sticking with to get my day started. Also including my essENTIAL seasoning & hot sauce.

I usually start my mornings with a cup or two of tea or coffee – I try to save coffee for later in the week when I’m getting more tired & need something stronger.

LUNCH:

You know me, I’m a creature of habit so I’m STILL having my arugula salad + carrots every single day! I guess the only main thing that’s changed since my summer post is that I add kale now (since it’s a winter green) and swapped out feta with vegan feta.

SNACK:

I usually get pretty hungry around 3/4pm ish, so I cut up a Fuji apple and drizzle crunchy almond butter & honey over it. In my opinion, it’s the perfect snack – satisfies my sweet tooth but is filling & healthy!! And then iced coffee in the early afternoon if I ~really~ need it. Iced coffee truly hits different!!

DINNER:

Okay so this is the fun part. The GREAT thing about tax busy szn is that I’m able to get a lot of my meals expensed, which saves a ton of time that I might have spent cooking. I usually never DoorDash/UberEats since the delivery fees are insane, but I’ve been able to treat myself these past couple of weeks!

Monday’s dinner:

I made my veggie soup that I’ve been making a LOT this past winter. Here’s what I add:

  • A mix of quinoa, red lentil, orza pasta
  • Broccoli, kale, mushrooms, onion
  • Air-fried tofu

Tuesday’s dinner:

I have been crazy-craving pizza lately!! I loved making pizza at home but it’s definitely time-consuming. I couldn’t find a lot of food delivery restaurants that use vegan cheese, so I went with the classic MOD Pizza Create-Your-Own (if you know any spots that do use vegan cheese, do let me know!!). I ate more than half of the pizza for dinner… it was so good, hit the spot.

Wednesdays’ dinner:

Wednesday was a big leftovers night: Monday’s soup and Tuesday’s pizza! I did get to expense a meal so I ordered Chipotle and started in on the chips & guac.

Thursday’s dinner:

Oof sorry for the rough pic – I was so hungry and busy on this night that I almost forgot to snap a pic for this blog post! Chipotle burrito bowl – classic!

Thursday’s late-night snack:

This is why I hate staying up late: I get hungry and then I’m like, what’s a good snack right before bed? I’ve been reaching for my RX bars, but hopefully I won’t have to do this too often haha.

Friday’s dinner:

I loveloveLOVE poke so I get it at least once a week. This week I ordered from FOB Poke Bar, but my fave so far has probably been from 45th Stop N Shop. So satisfying & fresh.

Saturday’s dinner:

Ordered thai food from Wild Ginger! Nothing special here – it was a huge portion and so delicious! (the pic above only shows 1/3 of it)

I feel super grateful for all of the meals I’ve been able to nourish myself with during busy season! I’ll definitely miss these meals once it’s all over!

    Love your busy season meals- they look SO good, I’m drooling! Love some of your takeout picks— I got a lot of similar food when I was expensing meals 😉
